Hotel Noor-Us-Sabah Palace is all set to entice the food lovers of Bhopal. with the ethnic food coming straight from the royal kitchen of Begums of three different dynasties. Hotel Noor-Us-Sabah Palace is organizing a Food Festival named ‘Za-aiqa from the kitchen of the Begums’ that will begin from 11th May until 13th May 2018.

Chef Suman, said that everybody talks about the ‘favourites’ of Nawabs and Kings, but rarely people talk about the favourite dished of the Begums. “To give the respect to the royal women and their love for food, we have organized this festival. I and my team has done a lot of research on the cuisine of three different dynasties before introducing this festival. After a long research of one and a half month we prepared the menu.”

Elaborating further he said, “It took us a lot of hardwork to prepare for this food festival. We used different spices and flavours to add the charm of the authentic cuisine with some of our innovations and hence we finally succeeded to come up with this menu.” This fest is a culinary tribute to various Begums of three Royal dynasties of the States of Pre Independent India including Bhopal, Nizams of Hyderabad and Nawabs of Awadh.

The dishes include to look forward too during the food festival are; Nizami Laal Korma, Nargisi Kofta, Raan Masala, Bhopali Chicken Rezala and more. In vegetarian section, dishes include Mass Ki Dal, Masoor Dal Ki Mussalam, Taheri and more.

While, The Jehan Numa Palace presents the Rajasthani Food Festival from 10th May to 13th May 2018. The food festival will present a lavish feast that was once savoured by the kings and folks of Rajasthan. Chef Jeewan mentioned, “Rajasthani cuisine is unique in many ways from other culinary traditions of India. Over the years, due to scarcity of water, green vegetables and climatic conditions, Rajasthani cuisine has developed a style of its own. Just like the rich arts and crafts of the state, the food is equally considered as a distinguished form of art.”

This Rajasthani Food Festival is not merely a food festival, but a celebration of the vibrant and regal culture of Rajasthan. Food of Rajasthan is colourful, has rich flavours, exotic aroma and ghee is used generously while preparing and serving a meal. The cuisine was influenced by both the war like lifestyles of its inhabitants and the availability of ingredients in that arid region. This Food Festival will offer a variety of traditional recipes such as Dal Batti Churma, Ker Sangri, Gatta Curry, Jaipuri Mewa Pulao, Papad ki Sabzi, Laal Maas, Malpua and much more.

My Take
The food at both the places is for the Rich, and by that I mean fit for the royals. It’s an opportunity for the Food Lovers in Bhopal to learn and explore about the dishes that are not known by everyone. The food at Hotel Noor-Us-Sabah Palace features the favourite cuisines of the begums to pay a culinary tribute to the royal women. They surely use the secret ingredients that were inherited and passed on to the generations by the Begums and they do justice by adopting those techniques while, the food festival at The Jehan Numa Palace is focused on spicy Rajasthani food that has a very vibrant and rich cultural history too.
